Just Veggie Meal Ideas - Sunday

Breakfast

Morning Snack

  • 1 small low-fat date muffin
  • 1 apple

Lunch

  • 1/2 cup vegetable juice
  • Green Mango Summer Fresh Salad: mix 1 julienned unripe or firm mango, 1/2 minced green onion, 1 tsp brown sugar, 4 tbsp julienned red pepper and a little water.
  • 1 slice Country Harvest Sunflower Flax bread, toasted and garnished with 1 tbsp veggie pate
  • 1/2 cup soy pudding

Afternoon Snack

  • Refreshing Smoothie: blend together 3/4 cup enriched soy beverage, 1/2 cup frozen fruit and 1/3 cup orange juice.

Dinner

  • Tempeh and Vegetable Stir-Fry on Jasmine Rice: Sauté 4 oz marinated tempeh, 1 cup your choice of vegetables (broccoli, baby corn, ginger, gombo, pak choi, water chestnuts, etc.) and light soy sauce to taste, then serve on 1 cup cooked jasmine rice .
  • 1/2 cup fresh fruit salad
  • Water, tea or herbal tea
