Just Veggie Meal Ideas - Sunday
Breakfast
- 1 banana
- 1 Country Harvest Whole Wheat bagel, toasted
- 2 tbsp peanut butter
- 1 cup enriched soy beverage
- Water, coffee or herbal tea
Morning Snack
- 1 small low-fat date muffin
- 1 apple
Lunch
- 1/2 cup vegetable juice
- Green Mango Summer Fresh Salad: mix 1 julienned unripe or firm mango, 1/2 minced green onion, 1 tsp brown sugar, 4 tbsp julienned red pepper and a little water.
- 1 slice Country Harvest Sunflower Flax bread, toasted and garnished with 1 tbsp veggie pate
- 1/2 cup soy pudding
Afternoon Snack
- Refreshing Smoothie: blend together 3/4 cup enriched soy beverage, 1/2 cup frozen fruit and 1/3 cup orange juice.
Dinner
- Tempeh and Vegetable Stir-Fry on Jasmine Rice: Sauté 4 oz marinated tempeh, 1 cup your choice of vegetables (broccoli, baby corn, ginger, gombo, pak choi, water chestnuts, etc.) and light soy sauce to taste, then serve on 1 cup cooked jasmine rice .
