Just Veggie Meal Ideas - Thursday

Breakfast

  • 1/2 cup fresh fruit juice
  • 2 slices Country Harvest Oat'n Honey bread
  • 2 tbsp tahini butter
  • 1/2 cup enriched soy beverage
  • Water, tea or herbal tea

Morning Snack

  • 1/2 cup fresh grapes

Lunch

  • Nuts'n Oats Burger: mix 1 tbsp oats, 1 tbsp ground walnuts, 1/4 cup chopped celery and carrots, 1 tsp flour and a little water, place patty on a lightly greased baking sheet and cook in oven at 350°F around 10 minutes each side or until golden brown. Serve on a toasted Country Harvest Stone Milled 100% Whole Wheat bagel and garnish to taste (old-fashioned mustard, green onions, lettuce, tomato, etc.).
  • 1 cup raw red and yellow pepper strips
  • 2 small fig cookies

Afternoon Snack

  • Strawberry Frozen Yogurt: blend together 3 oz soft tofu, 1/2 cup enriched soy beverage, 1/2 cup frozen strawberries and 2 tsp sugar.

Dinner

  • Lentil Cakes: mix 3/4 cup cooked and mashed lentils, 1/2 minced green onion, a few chopped black olives, flour and light soy sauce to taste. Form into patties, sprinkle with breadcrumbs and cook in oven at 350°F for 30 minutes.
  • 1 oven-baked potato
  • Sunny Salad: mix 1 cup spinach with clementines, bean sprouts, green grapes and green onions, sprinkled with 1 tbsp dressing made with orange juice, light soy sauce and garlic.
  • 1/2 cup lemon sherbet
  • Water, tea or herbal tea
