Just Veggie Meal Ideas - Tuesday

Breakfast

  • 1/4 cantaloupe
  • 3/4 cup whole grain bran flake cereal
  • 1 cup enriched soy beverage
  • 1 slice Country Harvest Twelve Grain bread
  • 1 tbsp almond butter
  • Water, tea or herbal tea

Morning Snack

  • 1 small low-fat date muffin

Lunch

  • Hearty Vegetable Soup: combine 1 oz mixed legumes, 1 cup vegetable broth, 3/4 cup your choice of vegetables (onion, celery, cabbage, turnip, etc.) and 1/3 cup stewed tomatoes, simmer and season with your favourite herbs.
  • 2 slices Country Harvest Whole Wheat bread, toasted and spread with 2 oz veggie pate
  • 1/2 cup seasonal fruit

Afternoon Snack

  • Express Energy Drink: blend together 1 cup enriched soy beverage, 1/2 banana, 1 tbsp peanut butter and 1 tsp honey.

Dinner

  • Fajitas: sauté 1 cup red and yellow pepper strips, celery and mushrooms, add a few drops of Tabasco, spoon into 2 tortillas and top with salsa and cheese (<20% M.F.) if desired.
  • Mixed Vegetable Salad: toss 1 cup broccoli, carrot and red onion with 1 tbsp homemade dressing.
  • 1/2 cup fresh pineapple
  • Water, tea or herbal tea
