Just Veggie Meal Ideas - Wednesday
Breakfast
- 1/2 grapefruit
- 1 Country Harvest bagel, toasted and spread with 1 tsp honey
- 1 cup enriched soy beverage
- 2 oz walnuts
- Water, tea or herbal tea
Morning Snack
- 1 apple
- 1 oz your choice of cheese (<20% M.F.)
Lunch
- 1/2 cup vegetable juice
- 1/2 cup tabbouleh (combining bulgur wheat, parsley, tomato, garlic and lime juice)
- 2 slices Country Harvest Seven Grain bread, toasted and garnished with 3 oz hummus, bean sprouts, tomato, peppers and old-fashioned mustard
- 1/2 cup soy pudding
Afternoon Snack
- 1/2 cup strawberries
Dinner
- Main-dish Avocado and Hazelnut Salad: combine 1 1/2 cup lettuce, 1/4 avocado, 6 cherry tomatoes in halves, 1 tbsp chopped hazelnuts and 1 grated carrot, sprinkled with 1 tbsp dressing made from olive oil, Dijon mustard and lemon juice.
