Just Veggie Meal Ideas - Wednesday

Breakfast

  • 1/2 grapefruit
  • 1 Country Harvest bagel, toasted and spread with 1 tsp honey
  • 1 cup enriched soy beverage
  • 2 oz walnuts
  • Water, tea or herbal tea

Morning Snack

  • 1 apple
  • 1 oz your choice of cheese (<20% M.F.)

Lunch

  • 1/2 cup vegetable juice
  • 1/2 cup tabbouleh (combining bulgur wheat, parsley, tomato, garlic and lime juice)
  • 2 slices Country Harvest Seven Grain bread, toasted and garnished with 3 oz hummus, bean sprouts, tomato, peppers and old-fashioned mustard
  • 1/2 cup soy pudding

Afternoon Snack

  • 1/2 cup strawberries

Dinner

  • Main-dish Avocado and Hazelnut Salad: combine 1 1/2 cup lettuce, 1/4 avocado, 6 cherry tomatoes in halves, 1 tbsp chopped hazelnuts and 1 grated carrot, sprinkled with 1 tbsp dressing made from olive oil, Dijon mustard and lemon juice.

  • 1/2 cup fruit salad
