Light and Simple Meal Ideas - Monday

Breakfast

  • 1 orange
  • 2 slices toasted Country Harvest Flax bread with 2 tsp jam
  • 1 soft-boiled egg
  • 1/2 cup milk (<2% M.F.)
  • Water, tea or coffee

Morning Snack

  • 1/2 cup fresh grapes
  • 2 tbsp walnuts

Lunch

  • 2 whole wheat pizzas made with Country Harvest Twelve Grain bread
  • 1 cup Greek salad - tomatoes, onions, cucumbers, olives and feta cheese with 2 tsp olive oil, 1 tsp wine vinegar and 1/2 tsp lemon juice
  • 2 kiwis

Afternoon Snack

  • Fruit smoothie - blend 3/4 cup milk, 1/2 cup frozen fruit and 1/4 cup orange juice

Dinner

  • Burritos - 1/3 cup crushed kidney beans, 2 tbsp chunky salsa, 2 tbsp chopped yellow and green bell peppers, 2 Country Harvest Twelve Grain wraps , 1 oz cooked chicken, lettuce and 1 oz cheese (<20% M.F.)
  • 1 cup garden salad with fresh vegetables and dressing (2 tsp olive oil and 1 tsp cider vinegar)
  • Mango and pear dessert - 1/2 very ripe mango, 1/4 cup pear, 1/3 cup plain yogourt, 1 tsp sugar, 1/2 tsp lemon juice and pinch of ground nutmeg
  • Water, tea or herbal tea
