Light and Simple Meal Ideas - Thursday
Breakfast
- 1/2 cup fresh fruit juice
- 2 slices toasted Country Harvest Oat &Honey bread with 2 tbsp peanut butter
- 1 cup milk (<2% M.F.)
- Water, tea or coffee
Morning Snack
- 1/2 cup grapes
Lunch
- Open-faced ham sandwich: Country Harvest Twelve Grain bagel, 3 oz cooked ham, fresh tomato, chopped red and green bell peppers and light Mozzarella cheese.
- Basil and sundried tomato dip - 2 halves chopped sundried tomatoes, 1/4 cup plain yogourt, 2 tsp chopped fresh basil, 1 tsp olive oil, garlic, salt and pepper
- 1 cup fresh vegetables
- 2 small fig cookies
Afternoon Snack
- Yogourt popsicles - blend 1/2 cup plain yogourt, 1/3 cup fruit juice concentrate and 1/3 cup milk (<2% M.F.) - pour into popsicle molds, freeze partly and insert popsicle sticks in the middle
Dinner
- Shrimp avocado: 1 ripe avocado (peeled and diced), 2 tsp lemon juice, 3 oz shelled cooked shrimp, lettuce and dressing (2 tsp olive oil, 2 tsp balsamic vinegar, 1/2 tsp Dijon mustard and garlic)
- 1 oven-baked or barbecued potato
- 1/2 cup lemon sherbet
- Water, tea or herbal tea
