Chicken with Mango Chutney Sandwich

Ingredients

  • 6 oz (175 g) boneless, skinless, cooked chicken, finely chopped*
  • 1/2 cup (125 mL) finely diced celery, approx. 2 stalks
  • 1/4 cup (60 mL) finely diced red onion
  • 1/4 cup (60 mL) finely chopped walnuts
  • 1/4 cup (60 mL) mango chutney
  • 2 tbsp (30 mL) low fat mayo, made with canola oil
  • 1 tbsp (15 mL) fresh lime juice
  • 8 slices Country Harvest Plus 100% Whole Wheat
  • 1 tsp (5 mL) non-hydrogenated margarine

Directions

  1. Mix together chicken, celery, red onion, walnuts, mango chutney, mayo and lime juice. Can be made up to 2 days in advance and stored covered in fridge.
  2. Evenly spread the margarine over the 4 slices of Country Harvest Plus.
  3. Scoop out 1/2 cup (125 mL) of the chicken mixture and spread evenly over the bread. Place second slice of bread on top and gently press down. Cut in half. Serve.
  4. Store any remaining filling in the fridge, covered for up to 2 days.

Makes 4 sandwiches.

Don't know what to do with leftover cooked chicken breasts? Try this filling for a great quick and easy dinner sandwich. The next time you'll cook an extra chicken breast on pupose.

*Most average skinless, boneless chicken breasts are 6 oz. (175 g) once they are cooked.

Grilled Peanut Butter Sandwich

Ingredients

  • 2 slices Country Harvest Plus Multigrain Crunch
  • 2 tbsp. (30 mL) peanut butter, crunchy or smooth, your choice
  • 1/2 Granny Smith apple, cored, peel on, sliced thinly
  • 1 tsp. (5 mL) non-hydrogenated margarine

Directions

  1. Heat a non stick pan over medium heat.
  2. Evenly spread 1/2 of the margarine on one slice of Country Harvest Plus. Spread the remaining margarine on the other slice.
  3. With margarine sides down, spread the peanut butter evenly over the 2 slices of Country Harvest Plus.
  4. Lay apple slices on top of the one of the slices.
  5. Place second slice of peanut buttered bread, peanut butter side down on top of the apple slices and gently press down.
  6. Place in heated frying pan and cook till browned on one side. Flip over and gently press down. Continue cooking until browned on the second side. Remove from frying pan, cut in half and serve.

Makes 1 sandwich.

A quick and easy dinner idea, this grilled apple and PB sandwich is a great combo. If you aren't feeling that adventurous substitute 1/2 medium banana for the apple and start grilling.

Serve with orange juice to help absorb the iron in this vegetarian sandwich.

New Wave Waldorf Sandwich

Ingredients

  • 4 cups (1L) cubed cooked chicken
  • 1/3 cup (75mL) light mayonnaise
  • 1 celery stalk, finely chopped
  • 1/2 cup (125mL) dried currants
  • 1/3 cup (75mL) toasted pine nuts
  • 1/4 cup (50mL) chopped fresh parsley
  • 1/4 tsp (1mL) salt and pepper
  • 1 tbsp (15mL) fresh lemon juice
  • 4 leaves red tipped leaf lettuce
  • 8 slices Country Harvest Plus 100% Whole Wheat

Direction

  1. In large bowl, mix together chicken and mayonnaise.
  2. Mix in celery, currants, pine nuts, parsley, salt, pepper and lemon juice.
  3. Lay 4 slices of Country Harvest Plus on counter. Line with lettuce.
  4. Mound 1 heaping cup of chicken mixture on top, flattening slightly.
  5. Top with remaining bread slices.

Makes 4 sandwiches

This sandwich is so full of flavour with its sight sweetness, lemony overtones and crunchness, that it needs no other adornment on the bread.
