ROLL IT: Breakfast Frittata Roll

Ingredients

  • 1 Country Harvest® 12 Grain Pita
  • 1/2 tsp (1.25 mL) olive oil
  • 1 free range egg
  • 1 Tbsp (15 mL) diced ham
  • 1 Tbsp (15 mL) diced red pepper
  • 2 Tbsp (30 mL) grated cheddar cheese
  • 1 tsp( 5 mL) chopped fresh basil

Directions

Heat olive oil in a small, non-stick skillet over medium heat. In a small bowl, whisk together the egg, ham, red pepper, cheese, and basil. Pour mixture into the heated skillet and cook gently until the bottom begins to set, pulling in the edges to form a small 5” circular frittata shape. Cook until the egg is just set and slide onto a Country Harvest pita. To serve fold over to form a burrito shape.

Makes 1 Frittata
Preparation Time: 10 minutes.
