Grilled Vegetable, Basil and Goat Cheese Sandwich

Ingredients

  • 4 slices Country Harvest Ancient Grains bread
  • 2 tbsp (30 mL) extra virgin olive oil
  • 4 slices eggplant – 1 cm thick
  • 4 slices zucchini – 1 cm thick
  • 4 slices red onion – 1 cm thick
  • 1/2 red pepper – cut in four lengthwise
  • 1 tbsp (15 mL) balsamic vinegar
  • 4 tbsp (60 mL) goat cheese
  • 6 large leaves basil – finely sliced
  • salt and pepper to taste

Directions

Pre-heat the BBQ to high. Lightly brush the vegetables with olive oil. Place on grill, season with salt and pepper and cook until marked and begin to soften. Turnover and repeat until cooked through. Remove from heat and sprinkle with balsamic vinegar. Place four slices of bread on the BBQ and grill until marked and bread begins to brown. Turnover, repeat and remove from heat.

To assemble sandwich, spread one tablespoon of goat cheese on each piece of grilled bread. Layer the eggplant, red onion, zucchini and red pepper. Sprinkle with fresh basil, top with second piece of grilled bread, slice and enjoy.
