Santa Fe Chicken Salad Bagels

Ingredients

  • 4 Country Harvest Twelve Grain bagels
  • 2 cups (500 mL) boneless, skinless chicken breasts, cooked and diced
  • 1/2 cup (125 mL) grape tomatoes, halved
  • 1/2 cup (125 mL) light mayonnaise
  • 2 green onions, chopped
  • 2 tbsp (30 mL) fresh coriander, chopped
  • 1 tbsp (15 mL) lime juice
  • 1 tsp (5 mL) lime rind, grated
  • 1/4 tsp each (1 mL each) salt, pepper and hot chili sauce
  • 4 Boston lettuce leaves

Directions

  1. In a bowl, mix chicken, tomatoes, mayonnaise, green onion, coriander and lime juice. Add salt, pepper and hot sauce.
  2. Split the bagels in half horizontally; toast until golden.
  3. Place one lettuce leaf on the bottom half of each bagel.
  4. Spoon chicken mixture evenly onto lettuce. Replace top of bagels and serve at once.

Makes 4 servings.
