STUFF IT: Curried Chicken Salad Pockets

Ingredients

  • 1 Country Harvest® 12 Grain Pita
  • 2 Tbsp (30 mL) plain yogourt
  • 1/2 tsp (2.5 mL) mild curry paste
  • squeeze fresh lime juice
  • pinch salt and pepper
  • 3/4 cup (180 mL) cubed cooked chicken
  • 2 Tbsp (30 mL) finely diced celery
  • 6 chopped red grapes
  • 1 Tbsp (15 mL) chopped walnuts
  • 1/2 cup (120 mL) field greens

Directions

Slice the pita in half with a serrated knife. In a small bowl, stir together the yogourt, curry paste, lime juice, salt and pepper. Add the chicken, celery, grapes and walnuts and stir to combine. Gently open the pita pockets and tuck in the field greens. Divide the curried chicken into each pita pocket and serve.

Makes 2 half pita pockets
Preparation Time: 10 minutes.
