STACK IT: Smoked Salmon Cheese Canapes

Ingredients

  • 2 Country Harvest® Greek Style Pita
  • 4 Tbsp (60mL) soft goat cheese
  • 2 tsp (10 mL) chopped chives
  • 2 tsp (10 mL) chopped dill
  • 1/2 tsp (2.5 mL) finely chopped lemon zest
  • 1 tsp (5 mL) freshly squeezed lemon juice
  • 6 slices smoked salmon
  • 12 slices small cucumber, halved
  • 6 rings thinly sliced red onion
  • few sprigs fresh dill
  • pinch freshly ground black pepper

Directions

In a small bowl, mix together the goat cheese, chives, dill, lemon zest and juice. Spread evenly over both pitas. Top with smoked salmon, cucumber halves and red onion. Place one pita on top of the other pita and cut through both pitas with a serrated knife into 8 wedges. Garnish with dill sprigs and freshly ground pepper.

Serves 8 as an appetizer
Preparation Time: 10 minutes.
