all grown up garden tuna salad

  • Country Harvest Twelve Grain bagels
  • 2 cans (170 g each) tuna
  • 1/3 cup (75 mL) light mayonnaise
  • 2 tbsp (25 mL) lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp (1 mL) pepper
  • 1/3 cup (75 mL) radishes, grated
  • 1/3 cup (75 mL) celery, chopped
  • 1/4 cup (50 mL) carrot, grated
  • 12 slices cucumber
  • 2 plum tomatoes, sliced
  • Leaf lettuce

In a bowl, stir together mayonnaise, lemon juice, garlic and pepper. Drain tuna. Add to bowl along with radishes, celery and carrot, stirring to coat thoroughly. Divide tuna mixture evenly among 4 bagels, topping with cucumber, plum tomatoes and leaf lettuce.

Garden-fresh vegetables give this garlic- and lemon-spiked tuna salad a healthy crunch.
