all-veggie sandwich

  • 2 tbsp (30 mL) guacamole (avocado spread)
  • 2 slices Country Harvest Whole Wheat Soy bread
  • 3 sundried tomatoes in oil or rehydrated, minced
  • 2 oz (60 g) tofu with fine herbs (or 4 thin slices)
  • 1/4 cup (60 mL) grated carrots or beets
  • alfalfa sprouts

Spread guacamole on bread slices, top one slice of bread with remaining ingredients then cover with remaining slice.

Try this recipe with Becel margarine: spread 4 tsp (20 mL) on the toasted bread for additional flavour.
