basil, brie and fresh tomato crostini

  • 8 slices Country Harvest Stone Milled 100% Whole Wheat bread
  • 1/4 cup (50 mL) olive oil
  • 2 cloves garlic, minced
  • 3 cups (750 mL) cherry tomatoes, quartered
  • 3 tbsp (50 mL) fresh basil, chopped
  • 1/4 tsp each (1 mL each) salt and pepper
  • 8 oz (250 g) brie cheese, thinly sliced
  • Basil leaves

Whisk olive oil with garlic; brush over both sides of bread. Combine cherry tomatoes, basil, salt and pepper. Place bread on grill over medium-high heat and toast until bottoms are golden – 2 to 3 minutes. Turn over and top with Brie. Close lid and grill until cheese is melted – again, 2 to 3 minutes. Top at once with cherry tomatoes and garnish with basil leaves.

Serve these crostinis as a casual backyard barbecue appetizer or as a light lunch with a green salad.
