beef and pepper fajita bagel melts
- 4 Country Harvest Whole Wheat Sesame bagels
- 1 lb (500 g) top sirloin grilling steak
- 1 tbsp (15 mL) chili powder
- 2 tbsp (25 mL) vegetable oil
- 1 zucchini, halved and thinly sliced
- 1 onion, thinly sliced
- 1 sweet red pepper, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp each (25 mL each) tomato paste and water
- 1 tsp (5 mL) Dijon mustard
- 1 cup (250 mL) shredded Monterey Jack or other mild cheese 1/2 tsp each (2 mL each) salt and pepper
Cut steak into 2-inch strips. In a bowl, whisk chili and half the oil, salt and pepper. Add steak and toss. In skillet over medium heat, stir-fry until browned. Transfer to plate.
Add remaining oil to pan. Stir-fry vegetables, garlic and remaining salt and pepper until tender-crisp. Whisk tomato paste, water and mustard. Add to pan with steak. Stir until thickened and heated.
Toast halved bagels. Place on baking sheet and spoon steak mixture over each half bagel. Sprinkle with cheese and broil until melted.
