chicken salad and apple sandwiches

  • 8 slices Country Harvest Seven Grain bread
  • 3 large boneless, skinless chicken breasts, cooked
  • 1/3 cup (75 mL) light mayonnaise
  • 2 tsp each (10 mL each) lemon juice and liquid honey
  • 1/4 tsp (1 mL) salt
  • 1/4 cup each (50 mL each) sweet yellow pepper and celery, diced
  • 2 green onions, chopped
  • 1 red apple, cored and thinly sliced
  • 4 lettuce leaves

Cut chicken breasts in half crosswise; shred finely. In a bowl, whisk together mayonnaise, lemon juice, honey and salt. Add chicken, yellow pepper, celery and green onions; toss to coat. Top 4 of the bread slices with leaf lettuce. Top with chicken salad mixture, then apple slices. Sandwich with remaining bread.

These sandwiches are great served up in a lunch box or picnic hamper as well as at home.
