santa fe chicken salad bagels

  • Country Harvest Twelve Grain bagels
  • 2 cups (500 mL) boneless, skinless chicken breasts, cooked and diced
  • 1/2 cup (125 mL) grape tomatoes, halved
  • 1/2 cup (125 mL) light mayonnaise
  • 2 green onions, chopped
  • 2 tbsp (25 mL) fresh coriander, chopped
  • 1 tbsp (15 mL) lime juice
  • 1 tsp (5 mL) lime rind, grated
  • 1/4 tsp each (1 mL each) salt, pepper and hot chili sauce
  • 4 Boston lettuce leaves

In a bowl, mix chicken, tomatoes, mayonnaise, green onion, coriander and lime juice. Add salt, pepper and hot sauce. Split the bagels in half horizontally; toast until golden. Place one lettuce leaf on the bottom half of each bagel. Spoon chicken mixture evenly onto lettuce. Replace top of bagels and serve at once.
